Shakshuka are eggs typically poached in tomato sauce. While this variation is less acidic than the traditional, it still holds its own with rich flavor thanks to plenty of herbs and cheese. Instructions ForShakshuka with Feta & Basil
2 tablespoons olive oil
3 garlic cloves, finely chopped
1 green chili, finely chopped
1 bunch swiss chard, cut into thin strips
12 basil leaves
1 bunch kale, cut into strips
½ teaspoon dried oregano
salt and pepper
½ cup crumbled feta
4 fried eggs
red chili flakes
more fresh basil to top off dish
HOW TO MAKE THIS RECIPE
Heat the oil in a pan and sauté garlic and chili until soft.
Cut all the vegetables into pieces and place in a large roasting pan.
Cut the top off the garlic and add in the pan.
Add swiss chard, basil and kale and cook until they start to soften.
Stir in oregano and season with salt and pepper.
Divide onto plates; top with feta, egg, and red chili flakes.
