Baked Eggs In Bread Baskets

Brunch is my favorite meal, always has been, always will be! I'll make any excuse to make a brunch myself, go to a refined brunch at a fancy restaurant or even visit a massive brunch buffet!

When I'm cooking brunch for friends, I always like to create things that are pre-portioned. I love muffins, fruit cups, granola bowls and mini quiche. This baked eggs in bread nests recipe is another perfect example. The portion is perfect for each guest to eat one or two, and you can even eat them with your hands. They're also easy to make, so even the kids can make them!

INGREDIENTS

  • 12 Slides of soft bread with the crusts cut off
  • 4 tbsp butter
  • 1 dozen best quality organic eggs
  • Salt & pepper to taste
  • Fresh thyme to serve

TIPS FOR INSPIRATION

  • You can top baked eggs with just about anything! Try different types of herbs and spices.
  • Save the crusts you cut from the slices of bread and use them to make homemade croutons.
  • To make this gluten free, place a canned stewed tomato in the bottom of each muffin compartment and top with an egg and bake.
